The Eight Kinds of Gözleme, and When to Eat Them
From cheddar to spinach, minced meat to chocolate — which filling suits breakfast, which suits the afternoon, and which the children will ask for.
Gözleme is one of the plainest and most filling things in Anatolian cooking. The same dough takes on a completely different character depending on what goes inside.
For the morning: white cheese and potato
Light but filling — ideal with a glass of tea to start the day.
For midday: minced meat and sucuk
These bring the energy back. Minced meat gözleme is far better when cooked with onion.
For afternoon tea: spinach and plain
Spinach gözleme is light enough to sit beside a glass of tea in the late afternoon. Plain, with butter, is for those who like it unadorned.
For children: chocolate
Nothing else comes close to chocolate melting on the griddle.
